In einer Welt, in der eigentlich alles jederzeit verf\u00fcgbar ist, bleibt der Tr\u00fcffel eines der letzten Mysterien. Ihr Duft \u2013 erdig, warm, fast hypnotisch \u2013 hat schon fr\u00fch K\u00f6che und Feinschmecker in seinen Bann gezogen. Und auch wenn \u00fcber Tr\u00fcffel schon alles gesagt und geschrieben wurde: Man kann der edlen Knolle aus dem Inneren der Erde einfach nicht genug huldigen. Mich hat diese Delikatesse vor rund 35 Jahren erwischt: ein erster, unscheinbarer Bissen des schwarzen P\u00e9rigord-Tr\u00fcffels, und es war um mich geschehen. Seit diesem Moment begleitet mich der Tr\u00fcffel in meiner K\u00fcche, und jede Saison erinnert mich daran, wie einzigartig sein Aroma ist.<\/p>\n<p style=\"text-align: left;\">Bemerkenswert ist, dass es oft nicht die gro\u00dfen Klassiker wie Tr\u00fcffelrisotto, Jakobsmuscheln oder Tournedos Rossini sind, die mich am meisten faszinieren \u2013 sondern die schlichtesten Zubereitungen. Ein warmes Landbrot, bestrichen mit Tr\u00fcffelbutter und belegt mit hauchfeinen Scheiben \u2013 das ist vielleicht eine der pursten Arten, Tr\u00fcffel zu genie\u00dfen. Ebenso ein R\u00fchrei, sanft cremig gestockt: Es bildet eine ideale B\u00fchne f\u00fcr die komplexen, tiefen Noten des Tr\u00fcffels. \u00dcppig im Geschmack, dabei bemerkenswert einfach in der Zubereitung. Gerade diese Einfachheit zeigt, warum Tr\u00fcffel seit jeher als kulinarisches Kleinod gelten:<br \/>\nSie brauchen keine aufwendige Inszenierung und keine B\u00fchne, sie <em>sind<\/em> die
