Erstaunlich: Als Rezept taucht sie erst nach 1530 auf \u2013 kein Wunder, denn erst mit der Entdeckung Amerikas und der R\u00fcckkehr der Spanier gelangte die Kartoffel \u00fcberhaupt nach Europa. Aber erst im sp\u00e4ten 18. Jahrhundert tritt die Kartoffel ihren Siegeszug in der Breite an. Belegte Rezepte finden sich in Kochb\u00fcchern des 18. und 19. Jahrhunderts. Sp\u00e4testens im 19. Jahrhundert listen franz\u00f6sische und deutsche B\u00fccher schlichte Varianten: Kartoffeln, Wasser oder Milch, dazu Zwiebel, Lauch oder Sellerie \u2013 mehr brauchte es nicht.<\/p>\n<p style=\"font-size: 20px; text-align: left;\"><strong>Parmentier<\/strong><\/p>\n<p style=\"font-size: 20px; text-align: left;\">In Frankreich tr\u00e4gt die Kartoffel-Lauch-Suppe bis heute den Namen \u201ePotage Parmentier\u201c \u2013 zu Ehren von Antoine-Augustin Parmentier, dem Aufkl\u00e4rer der Kartoffel im 18. Jahrhundert. In einer Zeit, in der die Knolle vielerorts als giftig galt und mancherorts f\u00fcr den menschlichen Verzehr verboten war, machte Parmentier sie salonf\u00e4hig: mit wissenschaftlichen Publikationen, \u00f6ffentlichen Demonstrationen und spektakul\u00e4ren Kartoffelmen\u00fcs f\u00fcr die Pariser Elite. Diese B\u00fchne wirkte nach \u2013 bis in unsere K\u00fcchen. Julia Child nannte die Potage Parmentier einst <em>\u201edie grundlegende franz\u00f6sische Familiensuppe, das R\u00fcckgrat der Nation\u201c<\/em>.<\/p>\n<\/div><\/div><\/div><\/div><\/div><div So entstanden raffinierte Varianten mit kr\u00e4ftigen Br\u00fchen, cremigen Milchprodukten und eleganten Garnituren, die sich klar von den einfachen Alltagsrezepten absetzen.<\/p>\n<p>In Deutschland gilt seit Jahrzehnten die klassische Kartoffelsuppe mit W\u00fcrstchen als Favorit: oft Wiener oder Bockw\u00fcrste, viel Suppengem\u00fcse und eine w\u00fcrzige Br\u00fche. Ein Hausmannsgericht, das in allen Regionen zu Hause ist.<\/p>\n<p><strong>Kartoffel-Parmesan-Suppe<\/strong><\/p>\n<p>Und dann die moderne Abzweigung: Die Kartoffel-Parmesan-Suppe ist kein \u00fcberlieferter Klassiker, sondern eine Weiterentwicklung bzw. Fusion, die seit den 2000er-Jahren regelm\u00e4\u00dfig in Kochb\u00fcchern, Foodblogs und Kochsendungen auftaucht. W\u00e4hrend man in Frankreich Kartoffelsuppe gern mit Cr\u00e8me fra\u00eeche oder Gruy\u00e8re verfeinert, weist die Kombination aus Kartoffeln und Parmesan auf italienischen Einfluss \u2013 besonders aus Norditalien: Trentino, Lombardei oder S\u00fcdtirol, wo Parmigiano Reggiano, Kartoffeln und Gem\u00fcsesuppen zur Alltagsk\u00fcche geh\u00f6ren. Zuvor 2 Kartoffeln beiseitelegen\u00a0&#8211; sie werden f\u00fcr die Kartoffelb\u00e4llchen ben\u00f6tigt. \u00a0Den Mixer f\u00fcr ca. 5 Sekunden anschalten &#8211; gerade so lange, bis alles einmal durchgemischt ist.<\/p>\n<p>Den Parmesan reiben und zu dem Kartoffelmix hinzugeben. Noch einmal \u00a0kurz p\u00fcrieren und abschmecken. Verwendet man Tr\u00fcffel, k\u00f6nnen zu diesem Zeitpunkt ein paar Tr\u00fcffelsp\u00e4ne hinzgef\u00fcgt werden.<\/p>\n<p>Der Rest ist Geschmackssache: Je nach pers\u00f6nlicher Vorliebe und wie s\u00e4mig, dick- oder d\u00fcnfl\u00fcssig die Suppe am Ende sein soll, kann nun der Rest Schlagsahne und l\u00f6ffelweise Kochwasser hinzugef\u00fcgt werden, bis die gew\u00fcnschte Konsistenz erreicht ist.
