Schon im Mittelalter standen sie regelm\u00e4\u00dfig auf dem Speiseplan der Kl\u00f6ster, wo Fastentage eine erstaunliche Vielfalt an Fischgerichten hervorbrachten. In den fr\u00fchen Kochb\u00fcchern des 14. und 15. Jahrhunderts \u2013 etwa im \u201eViandier\u201c von Taillevent oder im \u201eLiber de Coquina\u201c \u2013 finden sich Rezepte f\u00fcr gef\u00fcllte Fische. Damals kamen nicht nur Kr\u00e4uter und Zwiebeln zum Einsatz, sondern auch Trockenfr\u00fcchte, Mandeln oder Safran. Besonders beliebt war der gef\u00fcllte Hecht, der mit Kr\u00e4utern, Mandeln, Ingwer und Safran zubereitet wurde \u2013 also sehr aromatisch und aufw\u00e4ndig.<\/p>\n<p style=\"font-size: 20px; text-align: left;\">Die Idee selbst ist noch \u00e4lter: Schon in der r\u00f6mischen Antike beschrieb Apicius in seinem ber\u00fchmten Kochbuch Fische, die mit Kr\u00e4utern, N\u00fcssen, Honig, Pfeffer und Garum \u2013 einer w\u00fcrzigen Fischsauce \u2013 gef\u00fcllt wurden. Das Prinzip ist bis heute unver\u00e4ndert geblieben: Der Bauchraum dient als kleine Aromakammer, die den Fisch beim Garen von innen heraus w\u00fcrzt.<\/p>\n<\/div><\/div><\/div><\/div><\/div><div Ob Forelle, Renke, Dorade oder Wolfsbarsch \u2013 noch immer werden Fische mit frischen Zutaten gef\u00fcllt und sanft gegart oder gegrillt. Das Ergebnis ist ein unvergleichlich zartes Gericht, das ganz ohne schwere Saucen auskommt.<\/p>\n<p>Zur\u00fcck zur Forelle: Schon ein paar Kr\u00e4uter wie Petersilie und Dill, etwas Lauchzwiebel, ein Spritzer Zitrone und ein guter Schuss Oliven\u00f6l gen\u00fcgen. Einfach, frisch und dennoch raffiniert \u2013 ein Gericht, das immer wieder zeigt, wie wenig es braucht, um aus einem guten Fisch ein kleines Festessen zu machen. Nachfolgend ein Rezept, das bei uns seit vielen Jahren Tradition hat \u2013 und G\u00e4ste ebenso begeistert, wie alle Familienmitglieder. Die Zubereitung ist unkompliziert, und beim Anrichten sind keine Grenzen gesetzt: je nach Anlass mal ganz rustikal, mal \u00fcberraschend elegant. Einige Inspirationen dazu folgt weiter unten.
