Wasser auf ca. 80 Grad erhitzen und dann von der Herdplatte nehmen. Die Eigelbe in der Metallsch\u00fcssel mit einem Schneebesen oder Handmixer ca. 1 Minute aufschlagen, bis eine schaumige Masse entstanden ist. Dann die Sch\u00fcssel auf den Topf mit dem warmen Wasser setzen und den abgek\u00fchlten Estragon-Sud hinzugeben. Das Wasserbad auf die Herdplatte zur\u00fcckstellen und nun die Hitzezufuhr erh\u00f6hen, bis das Wasser zu kochen beginnt. Gr\u00fcndlich und konstant weiterschlagen, bis die Masse cremig und s\u00e4mig wird (zur Rose abziehen, etwa 65\u00b0C). Alles wieder von der hei\u00dfen Herdplatte nehmen &#8211; die Resthitze reicht f\u00fcr den n\u00e4chsten Schritt vollkommen aus und man vermeidet, dass die Eimasse anbrennt.<\/p>\n<\/div><div
