Doch Livorno, die stolze Hafenstadt an der K\u00fcste der Toskana, erz\u00e4hlt eine andere kulinarische Geschichte \u2013 eine, in der das Meer die Hauptrolle spielt. Der \u201eMerluzzo alla Livornese\u201c, also Kabeljau nach Livorner Art, ist ein Paradebeispiel f\u00fcr diese maritime Seele.<\/p>\n<p style=\"font-size: 20px; text-align: left;\">Livorno \u2013 die toskanische Hafenstadt, ber\u00fchmt f\u00fcr ihre weltoffene K\u00fcche \u2013 ist das Tor zum Meer und Ursprung dieses Rezeptes. Dieses traditionsreiche Fischgericht spiegelt die bewegte Geschichte eines historischen Handelszentrums wider, in dem sich seit Jahrhunderten Einfl\u00fcsse aus aller Welt mit dem reichen Schatz lokaler Produkte verbinden. Im 16. und 17. Der Fisch selbst wird bei diesem Rezept in frischer Variante verwendet und tr\u00e4gt so die Aromen des Meeres direkt auf den Teller. Gerade die Kombination von Meeresfrische und aromatischer Tomatensauce verdeutlicht, wie sehr die K\u00fcche Livornos von der N\u00e4he zum Ozean, aber auch vom Pragmatismus und Erfindungsreichtum ihrer Bewohner gepr\u00e4gt ist. Aus kulinarischer und historisch-regionaler Sicht \u00a0geh\u00f6ren Artischockenherzen nicht zur schlichten Rezeptur, welche die bodenst\u00e4ndige, aber aromatisch intensive<em> cucina povera<\/em> der toskanischen K\u00fcste widerspiegelt. Sie k\u00f6nnen aber eine stimmige, moderne Erweiterung sein und erg\u00e4nzen sich gut mit Tomate, Oliven\u00f6l und Kapern \u2013 also den Hauptaromen der Sauce.<\/p>\n<p>Ein Teller Merluzzo alla
