Ganz klar: Gazpacho! Diese ber\u00fchmte, kalte Suppe spanischer Herkunft ist nicht nur blitzschnell zubereitet, sondern auch unglaublich vielseitig und beliebt \u2013 Google listet dazu immerhin \u00fcber 900.000 Suchergebnisse.<\/p>\n<p style=\"font-size: 20px; text-align: left;\"><strong>Ein kurzer Blick in die Geschichte<\/strong><\/p>\n<p style=\"font-size: 20px; text-align: left;\">Die Urspr\u00fcnge der Gazpacho reichen bis in die maurische Zeit Spaniens (bis 1492) zur\u00fcck. Damals bestand die Suppe aus Gurken, Brot, Knoblauch, Oliven\u00f6l, Essig, Salz und Wasser \u2013 alles im M\u00f6rser zerkleinert. Tomaten und Paprika kamen erst nach der Entdeckung Amerikas nach Europa und wurden erst ab dem 18. Jahrhundert Teil des Rezepts.<\/p>\n<p style=\"font-size: 20px; text-align: left;\">Der Name \u201eGazpacho\u201c stammt vermutlich aus dem Mozarabischen, also dem Sprachgebrauch der im Mittelalter unter muslimischer Herrschaft lebenden Christen. Es gibt verschiedene Theorien zur Wortherkunft:<\/p>\n<ul>\n<li style=\"font-size: 20px; text-align: left;\">Vom Wort \u201ecaspa\u201c f\u00fcr \u201eFragmente\u201c, bezogen auf die Brotst\u00fccke in der Suppe<\/li>\n<li style=\"font-size: 20px; text-align: left;\">Vom lateinischen \u201egazophylacium\u201c (Schatzkiste), als Anspielung auf die Vielfalt der Zutaten<\/li>\n<li style=\"font-size: 20px; text-align: left;\">Oder vom spanischen \u201ecaspicias\u201c (\u00dcberreste), wiederum als Hinweis auf die bunte Mischung<\/li>\n<\/ul>\n<p style=\"font-size: 20px; text-align: left;\"><strong>Die Zubereitung &#8211; schnell, einfach, raffiniert<\/strong><\/p>\n<p style=\"font-size: 20px; text-align: left;\">Genug der Historie! Die Herstellung einer Gazpacho ist denkbar einfach: Das Gem\u00fcse und das Brot werden mit Wasser und Oliven\u00f6l p\u00fcriert, anschlie\u00dfend mit Essig, Salz und Pfeffer abgeschmeckt. Die Konsistenz kann von d\u00fcnnfl\u00fcssig bis s\u00e4mig variieren \u2013 je nach Vorliebe.<\/p>\n<p style=\"font-size: 20px; text-align: left;\">Meine pers\u00f6nliche Gourmet-Variante ist ein wenig aufwendiger: Ich brate Zwiebeln, Knoblauch, Sellerie und Paprika vorab an. Das nimmt der Suppe etwas Sch\u00e4rfe und verleiht ihr ein feineres Aroma.<\/p>\n<p style=\"font-size: 20px; text-align: left;\"><strong>Die Hauptzutaten<\/strong><\/p>\n<p style=\"font-size: 20px; text-align: left;\">Die Basis bilden aromatische Tomaten, rote Paprika, junger Knoblauch und erfrischende Gurken \u2013 ein sommerliches Geschmackserlebnis! Am besten schmecken heimische Tomaten im Juli und August. Au\u00dferhalb der Saison kann man auf hochwertige Dosentomaten (z. B. San Marzano) zur\u00fcckgreifen.<\/p>\n<p style=\"font-size: 20px; text-align: left;\">Ob die Tomaten enth\u00e4utet werden, Wei\u00dfbrot oder Croutons verwendet werden, die Zwiebeln roh oder ged\u00fcnstet sind, oder ob zus\u00e4tzliche Zutaten wie Fr\u00fchlingszwiebeln, Chili, Basilikum, Thymian, gr\u00fcne Paprika, Zucchini oder anderes Sommergem\u00fcse dazu kommen \u2013 das bleibt dem eigenen Geschmack \u00fcberlassen.<\/p>\n<p style=\"font-size: 20px; text-align: left;\"><strong>Tipp: Die Sache mit dem Brot<\/strong><\/p>\n<p style=\"font-size: 20px; text-align: left;\">Wird die Suppe mit Brot p\u00fcriert, bekommt sie eine helle, leicht apricotfarbene T\u00f6nung \u2013 fast wie mit Sahne verfeinert.
