sich die ohnehin fragile Situation im Servicebereich der Gastronomie sp\u00fcrbar versch\u00e4rft. Was einst das Herzst\u00fcck eines gelungenen Restaurantbesuchs war \u2013 aufmerksame, zugewandte Gastfreundschaft \u2013 scheint vielerorts nur noch wie eine l\u00e4stige Routine. G\u00e4ste berichten von getakteten Zeitfenstern, hastigem Abr\u00e4umen und einer Stimmung, die eher an eine Kantine erinnert als an ein gastliches Haus. Dahinter verbirgt sich ein strukturelles Problem: Die Branche k\u00e4mpft nicht nur mit einem eklatanten Mangel an Personal, sondern auch mit wachsenden beh\u00f6rdlichen Auflagen und einer erdr\u00fcckenden B\u00fcrokratie. Arbeitsbedingungen gelten als wenig einladend, und die verbliebenen Kr\u00e4fte sto\u00dfen oft an ihre Grenzen. So wird aus der einstigen Kunst des Bewirtens eine seltene Ausnahme, und das gemeinsame Mahl verliert jenen Zauber, der fr\u00fcher zwischen gedeckten Tischen und leisen Gespr\u00e4chen aufleuchtete. Die Speisekarte umfasst gut einhundert Gerichte; man ist gut beraten \u201eAcht K\u00f6stligkeiten\u201c zu bestellen, weil man dann von allem etwas hat. Ich nehme dazu geblatene Leisnudeln. Schlie\u00dflich ist man hier nicht in der Schlemmereule oder dem Bagatelle.<\/p>\n<p>Wir hatten einen Tisch um acht und waren um zehn nach zehn wieder auf der Stra\u00dfe. Und das ging so. Um 21.30 h fragt die freundliche junge Dame, ob wir, die wir mit dem Hauptgang gerade fertig sind, noch Hei\u00dfgetr\u00e4nk m\u00f6gen t\u00e4ten, weil man jetzt die Maschinen sauber machen wolle. Es wird verwundert verneint. Eine Viertelstunde sp\u00e4ter ist der Service wieder am Tisch. Ich h\u00f6re die aus dem England meiner Studentenjahre bekannte Ansage der \u201elast calls\u201c. Kaltgetr\u00e4nk, eh klar.<\/p>\n<p>Die letzte Runde der Getr\u00e4nke ist um 21.55 h am Tisch. Exakt f\u00fcnf Minuten sp\u00e4ter wird an den Nachbartischen schon mal das Besteck f\u00fcr den Folgetag ausgelegt. Lautes Gespr\u00e4ch zwischen dem damit besch\u00e4ftigten Personal. Um 22.00h steht die Restaurantleiterin mit einem Kreditkartenterminal am Tisch und kreischt das, was der Franzose die Addition nennt.<br \/>\nZehn nach zehn auf dem Trottoir. Wir sind die letzten.<\/p>\n<p>Wir hatten den zweiten \u201eslot\u201c; man kann auch den ersten kriegen, der ist von 18.00 bis 20.00 h. Ich kenne das aus New York, wo zwischen \u201efirst and second serving\u201c strikt geschieden wird und man um 19.55 h an die Bar gebeten wird, weil der Tisch frei werden muss. Na gut, the big apple. Aber in Trier? Im Great Wall?<\/p>\n<p>Die Restauration verlernt Gastlichkeit. Ich bin schon genervt, wenn ich meine Buchung im Netz \u00fcber ein verqueres System, das mich nach dem Grund meines Besuches fragt, einen Tag zuvor noch mal eigens best\u00e4tigen darf. Mittlerweile hat auch der Besuch selbst etwas vom Z\u00e4hlappell beim Barras. Essen fassen und wegtreten!<\/p>\n<p>In K\u00f6ln erinnere ich einen Franzosen, der mich sehenden Auges im Regen vor der T\u00fcr hat stehen lassen, weil man ja noch den Boden wischen m\u00fcsse. Pudelnass durfte ich dann rein. Inzwischen hat der Bumms nur noch Mittags auf. Soll so sein. Als Mann von Welt richtet man sich gern nach dem Personal. Ich k\u00f6nnte nun den Unterschied von Manieren und Etikette erkl\u00e4ren, aber warum sollte ich? Ich mach mir zuhause ein Butterbrot. Und was noch so im K\u00fchlschrank ist. Nennt sich \u201egirls\u2018 dinner\u201c und ist eine fabelhafte Idee.<\/p>\n<\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-3
