Oft bildet er, zusammen mit \u2192 <a href=\"https:\/\/culturefoodblog.de\/en\/empanadas\/\" target=\"_blank\" rel=\"noopener\">Empanadas<\/a>, den Auftakt eines Asados. Das Herzst\u00fcck des Chorip\u00e1n ist die gegrillte \u201eChorizo Criollo\u201c, eine saftige, grobe Schweinswurst (manchmal auch mit<span class=\"Apple-converted-space\">\u00a0 <\/span>Rindfleisch-Anteil), die au\u00dfen knusprig und innen zart bleibt. Sie unterscheidet sich deutlich von der spanischen roten Chorizo (die meist luftgetrocknet und mit Paprika gew\u00fcrzt ist) und auch von deutschen Bratw\u00fcrsten (die geschmacklich v\u00f6llig anders sind). Je nach Region und Rezept k\u00f6nnen die Zutaten einer Chorizo in S\u00fcdamerika leicht variieren, jedoch wird sie weder gep\u00f6kelt, gegart oder ger\u00e4uchert, sondern stets frisch gegrillt. Serviert wird sie dann in einem leicht angew\u00e4rmten St\u00fcck Baguette oder Ciabatta (kein Br\u00f6tchen!), das die Grillaromen und den austretenden Fleischsaft perfekt aufnimmt. <span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>Doch das wahre Highlight ist die Chimichurri-Sauce, traditioneller Begleiter zu gegrilltem Fleisch und eine w\u00fcrzige Kr\u00e4utermischung, die dem Sandwich seine unverwechselbare Frische und W\u00fcrze verleiht. Das Wort Chimichurri hat seinen Ursprung im Baskischen (Tximitxurri)<span class=\"Apple-converted-space\">\u00a0 <\/span>und bedeutet in Euskera<span class=\"Apple-converted-space\">\u00a0 <\/span>\u201eMischung\u201c.<span class=\"Apple-converted-space\">\u00a0 <\/span>Neben Chimichurri wird Chorip\u00e1n oft mit \u201eSalsa Criolla\u201c, einer Mischung aus Tomaten, Zwiebeln und
