Sie sorgt immer f\u00fcr leuchtende Augen und ist vor Arbeitsaufwand relativ \u00fcberschaubar. Wie Wolfgang Siebeck einmal sagte:<em> \u201eWer seine G\u00e4ste beeindrucken will, br\u00e4t eine Lammkeule.\u201c <\/em><\/p>\n<p style=\"font-size: 20px; text-align: left;\">Dabei waren Lamm- und Hammelfleisch lange Zeit in Deutschland weniger beliebt, da ihre Herstellung nicht rentabel war und oft von alten B\u00f6cken stammte, die im Stall vor sich hin stanken. Reisende berichteten nach ihrer R\u00fcckkehr aus Nordafrika oder dem Nahen- und Mittleren Osten von unangenehmen Erlebnissen mit diesem Fleisch, das oft alt und fett war. So entstand eine Aversion gegen Lammfleisch, obwohl es bei erfahrenen Gourmets als eine der delikatesten Fleischsorten gilt. Erst durch die Gastronomie erlangte Lammfleisch in den vergangen 30 Jahren den Platz, der ihm geb\u00fchrt. Perfekt gebratene Lammkoteletts oder ein Lammsattel sind nicht leicht zu \u00fcbertreffen \u2013 weder durch Rindersteak noch durch Schweinekotelett.<\/p>\n<p style=\"font-size: 20px; text-align: left;\">Lammkeule wird oft \u201eirgendwie fanz\u00f6sisch-mediterran\u201c zubereitet, also haupts\u00e4chlich mit Oliven\u00f6l, Thymian, Rosmarin, Knoblauch und etwas Gem\u00fcse. Eine besonders ansprechende Variante fand ich k\u00fcrzlich in einem Kochbuch der marokkanischen Ausnahmek\u00f6chin Najat Kaanache, die in Fez das \u2192 Restaurant NUR betreibt. Dieses Rezept kombiniert Gew\u00fcrze, Minze, Ingwer, Kreuzk\u00fcmmel, Orangen, Rosinen und Wachteleier \u2013 eine exotische Note, die das Gericht zu einem unvergesslichen Genusserlebnis macht. Die Lammkeule wieder in den Br\u00e4ter legen und die Oberfl\u00e4che mit dem Sud benetzen. Sollte sich Bratensaft auf der Platte gesammelt haben, diesen ebenfalls in den Br\u00e4ter gie\u00dfen<\/p>\n<p>Den Br\u00e4ter ohne Deckel\/Folie zur\u00fcck in den Backofen schieben. Die Lammkeule zweimal im Abstand von 5 Minuten mit dem Bratensaft \u00fcbergie\u00dfen. Dann den Ofen ausschalten. Die Haut ist nun relativ dunkel \u2013 das ist ok und muss so sein. Jetzt den Br\u00e4ter wieder aus dem Ofen nehmen. Die Lammkeule mit Paprika- und Kreuzk\u00fcmmelpulver bestreuen.
