Statt dessen wurde der Kalbsbraten mehreren Stunden mit gesalzenen Sardellen geschmort, aufgeschnitten, mit Bratenfond \u00fcberzogen, mit Kapern garniert und warm serviert. Von der Zubereitungsart her war dieses Gericht also urspr\u00fcnglich ein <em>brasato<\/em>.<\/p>\n<p style=\"font-size: 20px; text-align: left;\">Mit der Verf\u00fcgbarkeit von Dosenthunfisch und besseren K\u00fchlm\u00f6glichkeiten \u00e4nderten die traditionellen Osterien das Rezept und servierten es <em>alle maniera rustica antica<\/em>. Hier geht es um wahrhaftig gutes Essen mit frischen Zutaten, gekonnter Zubereitung und authentischem Geschmack! Zur Verwendung kommt bestes Kalbfleisch aus der mageren Nuss oder Kugel, das einen Tag lang mariniert wurde. Dazu \u2192 selbstgemachte Mayonnaise und St\u00fccke vom Thunfisch, der ganz ohne Einsatz von Fischernetzen geangelt wurde. Man findet ihn eher beim Feinkosth\u00e4ndler als im Supermarkt, doch der kleine Extra-Aufwand lohnt sich geschmacklich allemal.<\/p>\n<p style=\"font-size: 20px; text-align: left;\">Aufgrund der Marinier- und K\u00fchlzeit, aber vor allem, um sein ganzes Aroma zu entfalten, sollte man das Fleisch zwei Tage im Voraus vorbereiten und auch die Sauce kann man bequem am Vortrag In diesem Fall w\u00fcrde ich einen C\u00f4tes de Bordeaux oder Viognier empfehlen; Chardonnay\u00a0passt ebenfalls. Doch zu einem italienischen Traditionsgericht darf nat\u00fcrlich auch ein Wein aus dem Piemont nicht fehlen: Roero Arneis oder Gavi sind eine sichere Bank und harmonieren wunderbar mit dem Kalb und Thunfischaroma. Vermentino oder Pinot Grigio passen ebenfalls. Und ein gek\u00fchlter Langhe Nebbiolo schlie\u00dft den Kreis.<br \/>\nUnd was ist mit Ros\u00e9? Gut gek\u00fchlt an hei\u00dfen Sommerabenden passt der nat\u00fcrlich immer, vorausgesetzt er ist absolut trocken und hat im besten Fall ein paar sch\u00f6ne Kr\u00e4uteraromen, wie einige Weine aus
