Und die brachten die Spanier 1520 aus Mexico mit. Das schaumig-luftige und doch so intensiv schmeckende Kunstwerk der <em>mousse au chocolat<\/em> ist aber zweifellos eine Kreation der j\u00fcngeren K\u00fcchengeschichte. Selbst Escoffier erw\u00e4hnt sie in seinem ber\u00fchmten Buch von 1902 nur am Rande. Nach 1920 begann jedoch der unaufhaltsame Siegeszug dieses himmlischen Desserts, und heute gibt es kaum eine Dessertkarte, auf der die Mousse nicht zu finden ist. Und so ist es auch nicht verwunderlich, wenn ein solch beliebtes Rezept sich in Dutzende von Zubereitungsarten verzweigt. Von der fertigen Mousse au Chocolat \u2192 <a href=\"https:\/\/sichersatt.de\/nahrungsmittel\/snacks-kekse-nachspeisen\/mousse-au-chocolat-innova\/\" target=\"_blank\" rel=\"noopener noreferrer\">aus der Dose<\/a>, \u00fcber \u2192 <a href=\"http:\/\/www.oetker.de\/oetker\/produkte\/dessert_und_mehr\/spezialitaeten\/mousse_au_chocolat.html\" target=\"_blank\" rel=\"noopener noreferrer\">Instantpulver<\/a> (nur noch Wasser einr\u00fchren) und den Fertigprodukten im K\u00fchlregal bis hin zu unz\u00e4hligen Rezepturen in Kochb\u00fcchern hat man die Qual der Wahl. Das Culture Food-Rezept habe ich seit 1985 immer weiter verfeinert. Es ist also praxisbew\u00e4hrt und erf\u00fcllt alle wichtigen Kriterien: Nur beste Zutaten und keinerlei Hilfsmittel, intensiver Geschmack, eine perfekte Konsistenz und mit absoluter Eifix) herstellen, neigt die Cr\u00e8me zu gr\u00f6\u00dferer Festigkeit, als bei der Verwendung normaler Eier. In diesem Fall sollte die Mousse vor dem Servieren zeitig aus dem K\u00fchlschrank genommen &#8211; und bei Raumtemperatur serviert werden, damit die Cr\u00e8migkeit voll zur Geltung kommt. <\/em><\/p>\n<p><em><strong>Tipp 2:<\/strong> Mousse au Chocolat eignet sich sehr gut zum einfrieren und aufbewahren. Man kann also immer ein bisschen mehr herstellen, als ben\u00f6tigt wird ;-) \u00a0Wenn man sie \u00fcber 24 h \u00a0langsam im K\u00fchlschrank wieder auftaut, verliert sich nichts an ihrer Cremigkeit und Konsistenz.
