Ich betreibe kein Restaurant mehr (viermal in meinem Leben hatte ich das Vergn\u00fcgen), aber h\u00e4tte ich eines, dann w\u00e4re das hier meins: Geschmorte Short Ribs (Rinderrippen). In Portwein und Rotwein gegart, zergehen sie auf der Zunge und schmecken fabelhaft zu Kartoffelp\u00fcree und Mangold. In Italien werden \u201ecostine di manzo brasata\u201c traditionell in Rotwein gekocht und mit Polenta serviert. Auch gut.<\/p>\r\n\r\n\r\n\r\n<p>Grunds\u00e4tzlich bin ich ein gro\u00dfer Fan von geschmortem Fleisch im Br\u00e4ter oder Slow Cooker. Es hat etwas romantisches, es ist entspannt und es ist Slow Food oder Soulfood pur: Man sitzt gem\u00fctlich bei einem Glas Wein mit der Familie und Freunden zusammen, w\u00e4hrend das Fleisch schonend vor sich hinschmurgelt und die Wohnung langsam von herrlichem Bratenduft durchzogen wird. Die Short Ribs in den Br\u00e4ter legen (es sollte dabei knistern und brutzeln, ansonsten ist der Br\u00e4ter nicht hei\u00df genug) und von allen Seiten scharf anbraten, bis auf allen Seiten die Haut zu karamellisieren beginnt. Mit einem Holzl\u00f6ffel umr\u00fchren und dabei alle verkrusteten Teile vom Pfannenboden kratzen. Das in der Pfanne angesammelte Fett und der Fleischsaft sorgen f\u00fcr einen intensiven Geschmack.
