Ich lernte diese K\u00f6stlichkeit einst bei Peter Kapp, dem unangefochtenen Kultb\u00e4cker der Rhein-Neckar-Region, kennen. Hier fanden seine k\u00f6stlichen Marlis-Baguettes und Fougasses zu einem zweiten Leben. Indes wird die weltweite Foodie-Community nicht m\u00fcde, diese Leckerei in immer neuen Variationen zuzubereiten, sei es mit Artischockenherzen oder Fenchel, mit Thunfisch, mit hartgekochten Eiern, mit Pinienkernen, mit Feta-K\u00e4se und Gurken, mit Feigen, und, und, und\u2026 <\/p>\n\n\n\n<p>Der Grundgedanke dieses Klassikers der italienischen Cucina Povera ist ganz einfach: Altes Brot wird nicht weggeschmissen, sondern f\u00fcr einen leckeren Sommersalat genutzt. Panzanella (oder auch Pansanella, Panmolle oder Panm\u00f2llo) wird bereits um 1500 von dem Hofmaler der Medici in Florenz, Bronzino, in seinen <em>\u201eRime In Burla\u201c<\/em> erw\u00e4hnt. Fest steht: Dieses einfache Gericht ist auf den typisch b\u00e4uerlichen Brauch zur\u00fcckzuf\u00fchren, altes &#8222;pane sciocco&#8220; (ungesalzenes Brot) einzuweichen und es dann mit Gartengem\u00fcse zu w\u00fcrzen; anderen zufolge entstand es an Bord von Fischerbooten, als Seeleute, um altes Brot nicht zu verschwenden, es in Meerwasser einweichten und zusammen mit dem verf\u00fcgbaren Gem\u00fcse a\u00dfen.<\/p>\n\n\n\n<p>In der Toskana bekam ich einmal Panzanella serviert, welche aus v\u00f6llig aufgeweichtem Brot, roten Zwiebeln, halbierten Tomaten, Gurkenst\u00fcckchen und Oliven\u00f6l zubereitet war. Aber nat\u00fcrlich geht auch Baguette, Wei\u00dfbrot, Ciabatta oder Fougasse. Meine Version ist sehr reduziert und beschr\u00e4nkt sich auf wenige Zutaten, so dass das feine Aroma des Brotes noch erkennbar ist. In eine gro\u00dfe Sch\u00fcssel geben. Oliven entkernen und in Scheiben oder H\u00e4lften schneiden. Tomaten vierteln, Knoblauch sch\u00e4len und auspressen.<\/p>\n\n\n\n<p><strong>Schritt 2<\/strong><br>Dieser Arbeitsschritt h\u00e4ngt davon ab, ob das Brot v\u00f6llig trocken, leicht angetrocknet oder relativ frisch und weich ist. Hartes und trockenes Brot wird zun\u00e4chst in eine Sch\u00fcssel mit Wasser gelegt und danach auf K\u00fcchenpapier oder einem Geschirrtuch getrocknet. Wie lange das alte Brot ins Wasser kommt, h\u00e4ngt vom Grad des Alters und der H\u00e4rte ab &#8211; 30 Sekunden bis 2 Minuten geben eine grobe Orientierung. Danach wird wie mit weichem Brot verfahren: Die Brotw\u00fcrfel in einer Eisenpfanne mit etwas Oliven\u00f6l bei geringer Hitze anbraten und dabei regelm\u00e4\u00dfig umr\u00fchren. Das Brot darf nur ganz leicht und golden anger\u00f6stet werden, aber keinesfalls dunkel und zu knusprig werden. Das Brot aus der Pfanne nehmen, abk\u00fchlen lassen und die zu dunkel gewordenen Kr\u00fcmel aussieben. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a
