Lang geh\u00fctete und vertrauliche Familienrezepte machen einen gro\u00dfen Teil der Geschichte dieser Torte aus. Sie ist nicht zu s\u00fc\u00df, und sie ist reichhaltig, cremig und mit frischen Sommerfr\u00fcchten oder Kompott einfach k\u00f6stlich. Die F\u00fcllung ist recht leicht, da das Verh\u00e4ltnis zwischen Milch und Eiern zugunsten der Milch ausf\u00e4llt. Und der buttrige Keksboden bildet einen perfekten Ausgleich zu der cremigen F\u00fcllung. Einfach lecker!<\/p>\n\n\n\n<p>Die Geschichte der \u201eMilk Tart\u201c (afrikaans: melktert) ist lang. Sie nimmt ihren Anfang in der niederl\u00e4ndischen Kapkolonie um 1700. Man vermutet, dass sie sich aus der fl\u00e4mischen &#8218;Mattentaart&#8216; entwickelt hat, einem k\u00e4sekuchen\u00e4hnlichen Dessert. In der Afrikaans-Kultur &#8211; wie in Oudtshoorn und der Kleinen Karoo &#8211; ist dieser \u201ePuddingkuchen\u201c seit langem eine Art Grundnahrungsmittel. Man findet ihn auf Kirchenbasaren, in heimischen K\u00fcchen und auch in s\u00fcdafrikanischen Superm\u00e4rkten. Meine Version orientiert sich an einem Rezept, das ich k\u00fcrzlich in der \u2192 <a href=\"https:\/\/blyderivercanyon.co.za\" target=\"_blank\" rel=\"noopener\" title=\"\">Blyde River Canyon Lodge<\/a> am Fu\u00df der Drakensberge kennenlernte. Die dortige K\u00f6chin ist eine zauberhafte alte Dame, die mit ihrem kleinen Team in einer noch kleineren K\u00fcche die gro\u00dfartigsten Men\u00fcs f\u00fcr die G\u00e4ste zaubert und die mir freundlicherweise ihr Rezept aufgeschrieben hat. Ich musste es allerdings ein wenig anpassen, denn in deutschen Superm\u00e4rkten findet man weder die in S\u00fcdafrika popul\u00e4rem Tennis-Kokos-Kekse, noch entsprechen Milch und Kondensmilch den dortigen F\u00fcllmengen oder Fettstufen. Die Tennis-Kekse f\u00fcr den Boden kann man durch einfache Butterkekse ersetzen. Allerdings habe ich mit der Zeit herausgefunden, dass eine Mischung aus L\u00f6ffelbiskuits, Haferkeksen und Cantuccini ein geschmacklich \u00fcberzeugenderes Resultat erzielt. Kekse abwiegen und fein zermahlen &#8211; das geht am einfachsten in einem Mixer (Blender); die gemahlenen Kekse mit der fl\u00fcssigen Butter fest verkneten (die Mischung bleibt leicht br\u00f6selig \/ sandig).
