Aber so einfach ist es nicht. Wikipedia wei\u00df, dass erste Rezepte bereits vor \u00fcber 2000 Jahren von den R\u00f6mern aus dem Orient mitgebracht wurden. Heute kennt man weltweit unz\u00e4hlige Variationen: Einige nennen es <em>Chimichurri, <\/em>andere<em> Salmoriglio, Schug, Chermoula, Pistou, Pesto, Bagnet Verd, Sauce Chien, Hari Chutney <\/em>oder<em> Sauce Verte<\/em>, aber unabh\u00e4ngig von der Sprache oder Geographie wird sie \u00fcberall in \u00e4hnlicher Weise verwendet. Diese gr\u00fcne Magie kann \u00fcber praktisch alles gel\u00f6ffelt werden: \u00fcber Fisch, Huhn, Steak, Burger, Lamm, Sandwiches, Reis, Kartoffeln oder zu Gem\u00fcsesticks als Aperitif. Und es ist ein Rezept, das unendlich variiert werden kann.<\/p>\n<p>Im Gegensatz zur Frankfurter Gr\u00fcnen Sauce oder norditalienischen Variante, enth\u00e4lt mein Rezept weder Ei, Senf, K\u00e4se oder irgendwelche Milchprodukte. Die Basis besteht lediglich aus ganz frischen Kr\u00e4utern, Oliven\u00f6l, Knoblauch, Zitrone, Kapern, Pfeffer und Salz. Aber welche Kr\u00e4uter? Das h\u00e4ngt von der Jahreszeit und Verf\u00fcgbarkeit ab. Bei mir besteht die H\u00e4lfte immer aus glatter Petersilie und Basilikum, der Rest ergibt sich. Koriander, Minze, Oregano, Estragon, Schnittlauch, Thymian oder Rosmarin eignen sich ausgezeichnet als Beimischung. Ich benutze in meiner K\u00fcche gerne einen elektrischen Zerkleinerer mit dem hacken, mixen, p\u00fcrieren, verquirlen und r\u00fchren einwandfrei funktioniert. Hinzu kommen, je nach Verf\u00fcgbarkeit Koriander, Minze, Oregano, Estragon, Schnittlauch, Thymian oder Rosmarin. Auf genaue Mengenangaben kommt es hier nicht so sehr an. Das Rezept ist sehr flexibel, machen Sie sich daher keine Gedanken, falls die Verh\u00e4ltnisse anfangs vielleicht noch nicht so ganz stimmen. Am Ende den Saft einer halben Zitrone hinzuf\u00fcgen und abschmecken. Die Salsa sollte mehr s\u00e4uerlich als \u00f6lig schmecken und nicht zu dickfl\u00fcssig, etwa wie eine Paste, sein.
