F\u00fcr all jene, die diese aufwendige Spezialit\u00e4t aus Profiteroles nachbacken m\u00f6chten, empfehle ich <a href=\"https:\/\/www.bingingwithbabish.com\/recipes\/2017\/8\/15\/ccourtesan-au-chocolat\" target=\"_blank\" rel=\"noreferrer noopener\">\u2192 diese Videoanleitung<\/a>. F\u00fcr alle anderen gibt es hier das traditionelle Rezept, das mit einem <em>puff dough<\/em> oder <em>p\u00e2te \u00e0 choux<\/em>, also einem Brandteig, gemacht wird.<\/p>\n\n\n\n<p>\u00dcbrigens: Im 17. Jahrhundert verstand man unter Profiteroles hohle Br\u00f6tchen, die mit Kalbsbries, Tr\u00fcffeln, Artischockenherzen, Pilzen, Rebhuhn und Fasan gef\u00fcllt waren.  Die s\u00fc\u00dfe Variante, wie wir sie heute kennen, kam erst viel sp\u00e4ter; das erste Rezept stammt von Marie-Antoine Car\u00eame, der in seinem Buch <em>Le Cuisinier royal parisien<\/em> (1828) ein Rezept f\u00fcr Schokoladen-Profiteroles notierte. Danach begann der weltweite Siegeszug. W\u00e4hrend in Deutschland vor allem gro\u00dfe Windbeutel serviert werden (h\u00e4lftig aufgeschnitten und mit Schlagsahne gef\u00fcllt), werden die deutlich kleineren Profiteroles in Frankreich mit einer feinen Vanille oder Schokoladencr\u00e8me gef\u00fcllt und einzeln verspeist. In Norditalien baut man die Profiterolles zu einer kleinen Pyramide auf, \u00fcbergie\u00dft sie mit fl\u00fcssiger, dunkler Schokolade und verziert sie danach mit Schlagsahne. Je weiter man in den S\u00fcden oder in w\u00e4rmere L\u00e4nder reist, desto seltener wird eine Cr\u00e8mef\u00fcllung oder Schlagsahne verwendet, sondern es kommt statt dessen Vanille- oder class=\"wp-block-list\"><li>Brandteig nach \u2192 <a href=\"https:\/\/culturefoodblog.de\/en\/brandteig\/\" target=\"_blank\" rel=\"noreferrer noopener\">diesem Rezept <\/a> fertig im Dressier-\/Spritzbeutel <\/li><\/ul>\n\n\n\n<p>Die Schokoladencr\u00e8me bereitet man am besten einen Tag im Voraus zu, da sie vollst\u00e4ndig heruntergek\u00fchlt sein muss, bevor man sie in die Profiteroles f\u00fcllt.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>50 g Zucker<\/li><li>1 EL Mehl Type 405<\/li><li>2 geh\u00e4ufte EL Maisst\u00e4rke (Maizena, Gustin, etc.) <\/li><li>3 Eigelb<\/li><li>650 ml Milch<\/li><li>250 g geteilte Bitter-Kuvert\u00fcre oder dunkle Callets mit &gt; 60% Kakao Anteil<\/li><\/ul>\n\n\n\n<p>Profiteroles schmecken auch mit anderen F\u00fcllungen wie beispielsweise Vanille-, Zitronen- oder Amarettocr\u00e8me, Fruchtp\u00fcrees, Eis, Pudding oder einfache Schlagsahne.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a Dabei handelt es sich um eine klassische Konditorcreme oder cr\u00e8me p\u00e2tissi\u00e8re. Die fertige Schokoladenmilch beiseite stellen und 1-2 Minuten abk\u00fchlen lassen. Man sollte sich also nicht auf den Timer verlassen, sondern in der letzten Minute am Ofen stehen und aufpassen. <\/p>\n\n\n\n<p>W\u00e4hrend die Profiteroles im Ofen sind, die abgek\u00fchlte Cr\u00e8mef\u00fcllung in einen Spritzbeutel mit ganz feiner T\u00fclle umf\u00fcllen.
