Jahrhundert und wird einem italienischen Konditor namens Pantanelli zugeschrieben, der zum Gefolge der K\u00f6nigin Katharina von Medici geh\u00f6rte. Mit ihr gelangte das Rezept nach Frankreich, wo das K\u00e4segeb\u00e4ck unter dem Namen &#8222;goiere \/ gouy\u00e8re&#8220; zum ersten Mal Erw\u00e4hnung findet. Weitere Rezeptvarianten sind franz\u00f6sische K\u00e4se-Tartelettes oder der schweizer K\u00e4se-Brot-Auflauf Ramequin. Bis heute wird jedes Jahr im Mai im fraz\u00f6sischen Flogny-la-Chapelle das Goug\u00e8re-Fest gefeiert.<\/p>\n<p>Ob nun Windbeutel, K\u00e4sekuller, B\u00e4llchen oder K\u00e4se-Profiteroles&#8230; die kleinen, luftigen Happen eignen sich perfekt f\u00fcr eine Weinprobe oder zum Aperitif und schmecken am besten frisch gebacken und noch lauwarm. Anstelle von Wasser kann man 120 g Wei\u00dfwein oder einen Wein-Wasser Mix verwenden. Als Erg\u00e4nzung zu Schritt 4 der Brandteig-Rezeptur f\u00fcgt man am Ende noch etwas geriebene Muskatnuss, etwas wei\u00dfen Pfeffer und den geriebenen K\u00e4se hinzu. Ein Backblech oder Gitter mit Backpapier belegen (Silikonmatte geht auch) und kleine Teigh\u00e4ufchen aufspritzen. Als Richtlinie f\u00fcr die Gr\u00f6\u00dfe kann man sich an einen Durchmesser von ca. \u00d8 2,5 cm oder an kleinen Waln\u00fcssen orientieren. Nach 3 Minuten die Umluft ausschalten und die Temperatur auf 180\u00b0 C. reduzieren. Ca. 10-12 Minuten goldgelb backen. Am Ende der Backzeit muss man ziemlich aufpassen: In einem Moment ist das Geb\u00e4ck noch blass-gelb und im n\u00e4chsten Augenblick sind sie schon dunkelbraun.
