Heute ist das cool, mehr noch: Gelegentlich trifft man sich allein aus diesem Grund. Bei Swap-Partys wechseln Gl\u00e4ser voller Kirschmarmeladen und selbstged\u00f6rrten Pflaumenchips den Besitzer. \u201eFood-Prepping\u201c, der englische Begriff f\u00fcr \u201eHaltbarmachen\u201c, liefert auf Instagram an die hunderttausend Ergebnisse. Wie passt dazu der deutsche Rumtopf? Seine Geschichte begann laut historischen \u00dcberlieferungen mit dem Transport von Fr\u00fcchten und Rum in der Kolonialzeit. Als westlichster Punkt der Ostsee war Flensburg einer der bedeutendsten Handelsh\u00e4fen f\u00fcr die Schiffe der D\u00e4nisch-Westindien-Flotte, die regelm\u00e4\u00dfig die &#8222;Jungferninseln&#8220; in der Karibik, die ehemals d\u00e4nisch-westindischen Inseln St. Croix, St. Thomas und St. John, ansteuerten. Durch Zufall fielen eines Tages die Fr\u00fcchte in ein Fass, das mit Rum gef\u00fcllt war. Die Fr\u00fcchte blieben anschlie\u00dfend deutlich l\u00e4nger haltbar, als erwartet. Beim klassischen Rezept beginnt man bereits im Fr\u00fchsommer, die ersten Fr\u00fcchte mit etwa der gleichen Menge Zucker und hochprozentigem Rum einzulegen und mit jedem Monat kommen neue Zutaten hinzu, bis in den Winter hinein. Die Reihenfolge der Fr\u00fcchte wird durch die Jahreszeiten bestimmt. Im Dezember g\u00f6nnt man ihm dann eine letzte Ruhephase bevor er meist zu Weihnachten das erste Mal serviert wird. F\u00fcr einen guten Rumtopf sollte man deshalb nur reifes, frisches und vor allem absolut einwandfreies Obst (ohne Druckstellen etc.) verwenden.\u00a0 Theoretisch k\u00f6nnen so gut wie alle Fr\u00fcchte genutzt werden, die von Fr\u00fchjahr bis Herbst in unseren Regionen zu finden sind. Die Erdbeeren unbedingt ganz lassen, nicht halbieren. Nur rote und reife Fr\u00fcchte ohne Gr\u00fcnstellen verwenden. 500 g k\u00fcchenfertige Erdbeeren auf den Boden des Rumtopfs geben, mit 500 g Kristallzucker vermischen und 2 Stunden ziehen lassen.<br>Die Vanilleschote der L\u00e4nge nach anritzen und zusammen mit der Zimtstange in den Topf geben.<br>Danach die Fr\u00fcchte mit ca 0,5 &#8211; 0,7 l Rum begie\u00dfen bis sie vollst\u00e4ndig bedeckt sind. Der Rum sollte ca. einen Fingerbreit \u00fcber den Fr\u00fcchten stehen. Vorsichtig umr\u00fchren damit sich der Zucker besser aufl\u00f6st und darauf achten, dass dabei keine Fr\u00fcchte besch\u00e4digt werden. Den Topf mit Klarsichtfolie bespannen und dann mit dem Deckel verschlie\u00dfen. Die sch\u00f6nsten Kirschen ohne Fehler und Druckstellen waschen, entsteinen, gut trocken tupfen und 500 g in den Rumtopf geben. 250 g braunen Zucker und ca. 500 ml Rum hinzuf\u00fcgen und die Fr\u00fcchte einmal vorsichtig umr\u00fchren. Der Rum sollte nun ca. 2 cm \u00fcber den Fr\u00fcchten stehen. Falls zu viele Fr\u00fcchte an der Oberfl\u00e4che schwimmen, kann man einen kleinen Teller nehmen und die Fr\u00fcchte damit beschweren, so dass sie alle von Rum bedeckt sind.
