Sie ist schnell und extrem einfach zuzubereiten und \u00fcberzeugt im Aroma durch ihre ausgewogene Balance zwischen Fruchtigkeit und feinen R\u00f6staromen. Urspr\u00fcnglich stammt diese Zubereitungsart aus Neapel (Salsa di Pomodoro), wo sie in einem Kochbuch erstmalig 1692 erw\u00e4hnt wurde. Besonders popul\u00e4r wurde sie durch italienische Auswanderer, die das Rezept in die\u00a0USA brachten und dort vor allem \u00fcber\u00a0New York und Chicago in unz\u00e4hligen Variationen verbreiteten. (Marinara Sauce).<\/p>\n<p>Die Grundsauce, die nur aus Tomaten, Knoblauch, frischen Kr\u00e4utern, Wein, Gew\u00fcrzen und Oliven\u00f6l besteht, l\u00e4sst sich vielf\u00e4ltig einsetzen, verfeinern und weiterverarbeiten. Dazu sp\u00e4ter mehr.<\/p>\n<p>Welche Tomaten verwendet man? Auch wenn uns die Superm\u00e4rkte und Werbung etwas anderes suggerieren wollen: Frische Tomaten schmecken nur zwischen Juli und September. Hinzu kommt, dass sich zum So\u00dfenkochen nicht alle Sorten eignen. Das beste Aroma liefern Eier-, Roma- oder Flaschentomaten. Sellerie? M\u00f6hren? Zwiebeln? Lorbeerblatt? Nein &#8211; in dieser puristischen Tomatensauce\u00a0ist all das nicht vorgesehen. Sie schmeckt haupts\u00e4chlich nach frischen, reifen Tomaten. <\/em><\/p>\n<p>&nbsp;<\/p>\n<\/div>\n<div class=\"column\">\n<p><strong>Schritt 1<\/strong>:\u00a0Die Knoblauchzehen sch\u00e4len und einmal mit dem Messer andr\u00fccken. In einer Sauteuse oder einem Kochtopf das Oliven\u00f6l erhitzen (aufpassen, dass das \u00d6l nicht beginnt zu rauchen) und den Knoblauch darin anr\u00f6sten, dabei hin und wieder wenden. Das Knistern und Knacken, sobald die Kr\u00e4uter mit dem \u00d6l in Ber\u00fchrung kommen, ist normal. Dabei werden \u00d6le und Duftstoffe freigesetzt. Dann den Rotwein, Salz und Zucker hinzugeben und die Hitze reduzieren. 20-30 Minuten k\u00f6cheln lassen. Nach ca. 15 Minuten k\u00f6nnen die Tomaten mit einem Kartoffelstampfer oder einer Gabel zerquetscht werden.<\/p>\n<p>Ein\u00a0Pfannen-Spritzschutz ist jetzt beim weiteren K\u00f6cheln sehr n\u00fctzlich. Perfekt. Den Herd ausschalten und mit der Restw\u00e4rme die Sauce solange k\u00f6cheln\u00a0lassen, bis die Konsistenz s\u00e4mig-schwerfl\u00fcssig ist. Vom Herd nehmen und abk\u00fchlen lassen.
