Manche sagen sogar, dass es bei ihnen oft Sp\u00e4tzle g\u00e4be \u2013 und meinen damit den seltsamen Trockenersatz aus der T\u00fcte, der geschmacklich ungef\u00e4hr soviel mit Sp\u00e4tzle zu tun hat, wie trockenes Hundefutter mit einem Filetsteak. Traurig ist auch, wie viele K\u00f6che und Gastronomen den Begriff &#8222;hausgemachte&#8220; Sp\u00e4tzle auf ihre Speisekarten schreiben, und damit eine Gesetzesl\u00fccke ausnutzen, die in der Deklaration zwischen hausgemacht und selbstgemacht einen weiten Interpretationsspielraum l\u00e4sst. Klar, in irgendeinem Haus sind die Sp\u00e4tzle nat\u00fcrlich gemacht worden&#8230;<\/p>\n<\/div>\n<div class=\"column\">\n<p>Unter anderem aus diesem Grund haben wir in unserer Familie beschlossen, keine Nudeln &nbsp;mehr aus der Packung, sondern nur noch selbstgemachte Sp\u00e4tzle zu essen. Bei vier Essern kann man aber auch ruhig 500 g Mehl &nbsp;und f\u00fcnf Eier nehmen &#8211; es wird nichts \u00fcbrig bleiben<\/em> ;-)<\/p>\n<ul>\n<li>500 g&nbsp;Sp\u00e4tzlemehl (alternativ Weizenmehl Typ 405 und 1 EL Hartweizengries)<\/li>\n<li>5 Eier<\/li>\n<li>1 TL Salz<\/li>\n<li>etwas frisch geriebene Muskatnuss<\/li>\n<li>ca. 200 ml kaltes Wasser<\/li>\n<li>1 Sp\u00e4tzlepresse (auch Sp\u00e4tzledrucker genannt) und ein elektrischer Handmixer mit Knethaken<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<\/div>\n<div class=\"column\">\n<p><strong>Schritt 1<\/strong>: Das Mehl durch ein Sieb in eine gro\u00dfe R\u00fchrsch\u00fcssel geben. Zu dem Teig ca. 100 ml Wasser hinzugeben und den Teig r\u00fchren. Wasser in kleinen Mengen hinzuf\u00fcgen; je nach Mehlsorte und Mehlqualit\u00e4t muss unterschiedlich viel Wasser hinzugegeben werden. W\u00e4hrenddessen einen gro\u00dfen Topf mit Wasser auf den Herd stellen und bei maximaler Leistung zum Kochen bringen. Das Wasser darf nicht nur leicht k\u00f6cheln sondern muss lebhaft sprudeln! Ca. 30 Sekunden warten. Ebenso, ob man sie anschlie\u00dfend&nbsp;in einer Pfanne mit Butter schwenkt, oder nur Oliven\u00f6l dar\u00fcber tr\u00e4ufelt, ob man sie mit K\u00e4se vermengt oder Semmelbr\u00f6sel dar\u00fcber gibt. Auf jedem Fall sollte man restliches Wasser, welches sich am Boden ansammelt, vorsichtig abgie\u00dfen, bevor man die Sp\u00e4tzle serviert oder weiterverarbeitet.<\/p>\n<p>&nbsp;<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"column\">\n<div class=\"page\" title=\"Page 3\">\n<div class=\"section\">\n<div class=\"layoutArea\">\n<p><strong><em>Gutes Gelingen und einen ebenso guten Appetit!<\/em><\/strong><\/p>\n<p>Tipp: Die R\u00fchrsch\u00fcssel und die Sp\u00e4tzlepresse lassen sich von Teigresten sehr einfach reinigen, wenn man hierbei nur lauwarmes Wasser verwendet.
