Was am Ende in den Becher, das Glas, die Feldflasche oder auf den L\u00f6ffel kommt ist ein Trank, der bei Kranken eine gewisse, belebende Heilwirkung hat, der Fr\u00f6stelnde mit Hitze durchflutet, Schwachen Kraft und Hoffnungslosen neuen Mut gibt. Von diesen Heilkr\u00e4ften wussten auch schon unsere Gro\u00dfm\u00fctter (ohne Details \u00fcber Kollagen, Cytein, Zink oder Phophptidylserin zu kennen) wenn Sie eine H\u00fchnersuppe auf den Tisch stellten, denn ihre heilende Wirkung wird schon seit Urzeiten gesch\u00e4tzt. In alten Kochb\u00fcchern wird sie als Essen f\u00fcr Kranke gepriesen. Sie vereint das Wissen aus traditioneller chinesischer Medizin, Anthroposophie, Hom\u00f6opathie und dem Zen-Buddhismus. Studien belegen, dass H\u00fchnerbr\u00fche bei der Genesung hilft, bei Erk\u00e4ltungen, Gelenkschmerzen, Knochenbr\u00fcchen, Libido-Sorgen, Bluthochdruck und Depressionen. Nicht schlecht, oder? Und auch aus k\u00fcchentechnischer Sicht ist H\u00fchnerbouillon unglaublich vielseitig: Ist der klare Gefl\u00fcgelsud fertig, kann er pur genossen werden oder als Suppengrundlage dienen. Er eignet sich als Fond auch zum Verfeinern von So\u00dfen oder als Basis f\u00fcr eine leckere Vinaigrette. Wichtig ist nur, dass es sich um ein altes, fettes Suppenhuhn handelt. Ein \u201egutes\u201c Suppenhuhn ist eine 18-24 Monate alte Legehenne. Die sind gar nicht so einfach zu bekommen. Man muss sich im Handel, beim Biobauern oder auf dem Wochenmarkt durchfragen. Normale Brath\u00e4hnchen sind ungeeignet und nach der langen Kochzeit v\u00f6llig trocken. Au\u00dferdem haben sie in ihrem kurzen Leben noch nicht genug Eigenaroma gesammelt. Und das Zeug, was in Schrumpffolie gepresst in der Tiefk\u00fchltruhe des Supermarkts angeboten wird, kann man auch getrost vergessen. H\u00fchner aus zweifelhafter Herkunft isst man nicht. Denken Sie an Massentierhaltung, Fischmehl, Antibiotika, Beruhigungsmittel und Hormone. Die Exh\u00e4ftlinge verraten sich schon durch ihre Leichtigkeit: Was 1,3 kg wiegt, ist nicht erwachsen. Beim H\u00e4ndler meines Vertrauens wiegen die Viecher bis zu 3 kg, weshalb mir meist ein halbes Suppenhuhn v\u00f6llig ausreicht. Eine gute H\u00fchnerbr\u00fche braucht hingegen zwischen 6 und 8 Stunden Kochzeit, selbst 10 Stunden schaden nicht. W\u00e4hrend des langen Kochvorgangs l\u00f6st sich das Kollagen aus dem Bindegewebe und aus den vielen sehnenreichen K\u00f6rperteilen und geht in die Suppe \u00fcber. Solche\u00a0Zeitangaben sorgen\u00a0f\u00fcr viele Diskussionen im Netz und schrecken\u00a0viele Hobbyk\u00f6che ab. Eigentlich zu Unrecht. Denn erstens betr\u00e4gt die reine Zubereitungszeit ja nur 15-20 Minuten; die Kochzeit selbst ist ja mit keinerlei Arbeit verbunden. Und zweitens zieht w\u00e4hrend der langen Kochzeit ein unvergleichlich wohliger Duft durch die R\u00e4ume, der alle Familienmitglieder inklusive der Vierbeinigen magisch in die K\u00fcche anlockt ;-) \u00a0Zweiflern empfehle ich die Probe aufs Exempel zu machen: F\u00fcllen Sie nach zwei Stunden ein Glas mit der Br\u00fche und vergleichen Sie dieses Muster am Folgetag mit dem Rest der Br\u00fche, die Sie 6-10 Stunden gekocht haben. Das Ergebnis wird Sie \u00fcberzeugen. Das halbe Huhn in den Topf legen und mit kaltem Wasser aufgie\u00dfen, bis alle Teile bedeckt sind. Zum\u00a0Kochen bringen. Drei, vier Minuten kr\u00e4ftig sprudelnd\u00a0kochen lassen, dann das Wasser weggie\u00dfen und das Huhn absp\u00fclen. Die Karotten, Zwiebeln und der Knoblauch m\u00fcssen nicht gesch\u00e4lt werden \u2013 gr\u00fcndlich unter kaltem Wasser abb\u00fcrsten reicht vollkommen und geht schneller. Vom Lauch nimmt man am besten nur den mittleren Teil der Stange. Das Gem\u00fcse im Suppentopf mit 1 EL \u00d6l und allen Gew\u00fcrzen unter gro\u00dfer Hitze anr\u00f6sten. Sobald sich ein brauner Bodensatz bildet, den Topf vom Feuer nehmen und mit dem Wei\u00dfwein abl\u00f6schen.
