Hollywoodprominez wie Rock Hudson oder Lex Barker gaben sich die Klinke in die Hand, ebenso wie prominente Stars\u00a0 jener Zeit, etwa Herbert von Karajan und Curd J\u00fcrgens oder der Jet Set um Gunter Sachs und die Reeder Onassis und Niarchos. Und mittendrin ein hungriges, 10-j\u00e4hriges Kerlchen mit seinen Eltern: Ich!<\/p>\n<p>Damals gab es weder den heutigen Promi-Kult, keine Sicherheitsbedenken und auch weniger abgehobene Preise und so sa\u00dfen Promis, Normalos und Skilehrer eng gedr\u00e4ngt nebeneinander, um an langen Tischen das eine oder andere\u00a0Fl\u00e4schchen Veltliner, das ausgezeichnete Essen und die fantastische Aussicht auf die Berge des Oberengadins zu genie\u00dfen. W\u00e4hrend im vorderen Self-Service-Bereich Bratwurst, Pommes und Spagetti Bolognese ausgegeben wurden, servierte man im weiter hinten gelegenen Restaurant Delikatessen, die ich bis dahin noch nie zuvor gesehen oder gegessen hatte: Zwiebelsuppe, Hirschgeschnetzeltes mit Polenta, Carpaccio mit Tr\u00fcffel, Graved Lachs, Brioche mit G\u00e4nseleber gef\u00fcllt, Vacherin Mont d\u2019Or und die wom\u00f6glich besten R\u00f6sti in der gesamten Schweiz. Das \u201eLa Marmite\u201c pr\u00e4gte mich und setzte damals meine kulinarischen Standards. Ein ganz besonderer H\u00f6hepunkt war das mitten im Raum \u00fcppig arrangierte Buffet, auf dem nicht nur verschiedene Enten- und G\u00e4nseleberterrinen, Lachsseiten und Kaviar pr\u00e4sentiert wurden, sondern auch exotische Obstsalate, Mousse au Chocolat, Cr\u00e8me Caramel, Pavlova, Bread and Butter Pudding und ein riesiges Patisserie-Angebot. Der setzte nicht nur die Tradition des alpinen Gourmet-Restaurants erfolgreich fort, sondern erweiterte das Angebot unter dem Begriff MATHIS FOOD AFFAIRS zu einem Imperium mit acht verschiedenen Gastronomiebetrieben auf 2.486 m.\u00fc.M. Unter seiner Leitung entstand das, was man heute als \u201eContemporary Alpine Cuisine\u201c bezeichnet. Was im letzten Jahrhundert noch als Symbol f\u00fcr Jet-Set-Lifestyle und <em>Joie de Vivre<\/em> galt, wird heute of als unzeitgem\u00e4\u00dfe Luxus-V\u00f6llerei angesehen. Andere Gr\u00fcnde f\u00fcr den R\u00fcckzug von der Corviglia d\u00fcrften vor allem die \u00f6kologischen Ver\u00e4nderungen des Wintersports, eine starke Saisonabh\u00e4ngigkeit, aber auch ver\u00e4nderten Anspr\u00fcche der internationalen G\u00e4ste sein. Mit Champagner, Lachs oder Kaviar allein lockt man heute kaum noch Gourmets oder Prominenz auf den Berg.<\/p>\n<p>Deshalb ist dies der richtige Moment f\u00fcr eine Ver\u00e4nderung. Gemeinsam haben wir die Erinnerungen an das \u201eLa Marmite\u201c noch einmal aufleben lassen und die Klassiker aus 50 Jahren &#8211; <a href=\"https:\/\/culturefoodblog.de\/en\/downloads\/Speisekarte_Marmite.pdf\/\" target=\"_blank\" rel=\"noopener noreferrer\">hier ein Auszug der Speisekarte<\/a> &#x2b07;\ufe0e &#8211; nachgekocht.
