Das Erfolgsgeheimnis tief aromatischer Saucen \u2013 das wissen wir ebenso von der italienischen Landk\u00fcche wie von der franz\u00f6sischen Haute Cuisine \u2013 liegt vor allem darin, dass man ihnen viel Zeit l\u00e4sst. Und f\u00fcr diese Geduld wird man dann mit einem besonderen Geschmackserlebnis belohnt.<\/p>\n<p>Neben den traditionellen Garmethoden wie backen, braten, d\u00fcnsten, fritieren, grillen, pochieren, sautieren und sieden gibt es eine weitere Kochmethode: Das Simmern bei Temperaturen knapp unter 100\u00b0 C. Doch nicht vom Sous-Vide Verfahren, also dem Garen im Vakuumbeutel zwischen 60-70 Grad, ist hier die Rede, sondern von einer weitaus einfacheren und rustikaleren Methode: Der Zubereitung im Slow Cooker. Das ist ein elektrischer Kochtopf, einem Reiskocher nicht un\u00e4hnlich, in dessen Keramikeinsatz unterschiedliche Zutaten \u00fcber einen Zeitraum von mehreren Stunden schonend gesimmert werden. Doch auch bei uns w\u00e4chst die Fangemeinde stetig. Mittlerweile gibt es im Fachhandel die unterschiedlichsten Modelle zwischen 30,- und 200,- EUR. In meiner K\u00fcche steht so ein Ger\u00e4t seit fast drei Jahren und ist, neben dem \u2192 <a href=\"https:\/\/culturefoodblog.de\/en\/bauernente-aus-dem-tontopf\/\">R\u00f6mertopf<\/a>, zu einem unverzichtbaren Helfer geworden. Auch Suppen, Gem\u00fcse-Eint\u00f6pfe und Desserts sollen im Slow Cooker gut gelingen, aber damit habe ich bislang keine Erfahrung.<\/p>\n<blockquote><p>Das Produkt ist der Star! Nicht der Koch.<\/p><\/blockquote>\n<p>Und die Rezepte? Es gibt bereits eine ganze Reihe von Kochb\u00fcchern und Anregungen in den Internetforen. Einfach mal nach \u201eslow cooking\u201c googeln. Mir pers\u00f6nlich sind die meisten zu aufwendig. Denn der Slow Cooker schenkt einem nicht nur Zeit sondern macht das Kochen zu einem extrem puristischen und einfachen Vergn\u00fcgen, frei nach dem Motto: Das Produkt ist der Star, nicht der Koch. Als Faustregel bereite ich alle Speisen im Slow Cooker nach diesem Prinzip zu:<\/p>\n<ol>\n<li>Gem\u00fcse waschen, ggfs. sch\u00e4len und auf dem Boden verteilen<\/li>\n<li>Kr\u00e4uter und\/oder Boquet Garni hinzugeben<\/li>\n<li>1-2 EL \u00d6l hinzugeben<\/li>\n<li>mit Fl\u00fcssigkeit (je nach Rezept Wein und Wasser, Bier oder Br\u00fche) aufgie\u00dfen<\/li>\n<li>Fleisch parieren, salzen, pfeffern und auf das Gem\u00fcse legen<\/li>\n<li>fertig<\/li>\n<\/ol>\n<p>Die meisten Gerichte k\u00f6nnen schon am Abend vor dem Kochevent zubereitet, im Keramikeinsatz geschichtet und an einem k\u00fchlen Ort aufbewahrt werden. Am n\u00e4chsten Tag nur noch anschalten und Stunden danach mit den gew\u00fcnschten Beilagen servieren.<\/p>\n<p><a
