Denn immer geht es dabei auch um \u00dcberlieferungen, Tradition und Regionalstolz. <em>&#8222;Es kann nur eine Echte geben&#8220;<\/em> t\u00f6nt es vom Main und sogleich entbrennt die lebhafte Diskussion dar\u00fcber, welche Kr\u00e4uter denn nun f\u00fcr Goethe&#8217;s Lieblingsessen verwendet werden d\u00fcrfen, und welche nicht.<em> &#8222;Also Dill geht gar nicht!&#8220;<\/em> r\u00fcmpfen manche die Nase.<em> &#8222;Estragon hat absolut nichts in der gr\u00fcnen So\u00dfe verloren&#8220;\u00a0<\/em>t\u00f6nen die anderen. Und so weiter. Auch \u00fcber das Mengenverh\u00e4ltnis wird gerne debattiert. Und dar\u00fcber, ob nun Mayonnaise rein darf, oder nicht. Fakt ist: Vorg\u00e4nger der gr\u00fcnen Sauce sind in ganz Europa seit tausenden von Jahren bekannt. Bereits die alten R\u00f6mer kannten sie (und die wiederum haben sie aus dem Orient \u00fcbernommen). Und ihre Version ist f\u00fcr mich unerreicht lecker. Das liegt daran, dass sie keine\u00a0fertigen Kr\u00e4utermischungen aus dem K\u00fchlhaus und keine Tiefk\u00fchlprodukte verwendet. Sie geht einfach in ihren Garten und erntet ab, was da in den ersten, warmen Wochen des Jahres gewachsen ist. In k\u00fchleren Jahren, wenn es im Garten einfach noch nicht so weit ist, hilft\u00a0der Gem\u00fcseh\u00e4ndler mit etwas Treibhausware nach. Dazu gibt es stets besonders aromatische Kartoffeln (in diesem Jahr waren es <a href=\"http:\/\/slowfoodnuernberg.wordpress.com\/2011\/10\/02\/erlesene-kartoffeln-linda-sieglinde-blauer-schwede-co-schon-wieder-fernsehen\/\" target=\"_blank\" rel=\"noopener\">Linda<\/a>) von b\u00e4uerlichen Erzeugergemeinschaften. Und sonst nix. Und ich finde: Genau so sollte es sein. Der Rest ist eben Geschmacksache.<\/p>\n<p><strong><a href=\"https:\/\/culturefoodblog.de\/wp-content\/uploads\/2012\/04\/gruenesauce2.jpg\"><img decoding=\"async\" class=\"lazyload alignnone size-full wp-image-1804\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27578%27%20height%3D%27394%27%20viewBox%3D%270%200%20578%20394%27%3E%3Crect%20width%3D%27578%27%20height%3D%27394%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/culturefoodblog.de\/wp-content\/uploads\/2012\/04\/gruenesauce2.jpg\" alt=\"gruenesauce2\" width=\"578\" height=\"394\" \/><\/a><\/strong><\/p>\n<p>REZEPT GR\u00dcNE SAUCE \u00a0(f\u00fcr 4 Personen)<\/p>\n<div>&#8211; \u00a0400 g frische Kr\u00e4uter aus dem Garten und ohne Stiele (je nach Jahreszeit):<br \/>\nPetersilie, Schnittlauch, Dill, Kresse, Borretsch, Kerbel, Sauerampfer<\/div>\n<div>&#8211; 8 (nicht zu) hart gekochte Eier<\/div>\n<div>&#8211; 400 ml Dickmilch<br \/>\n&#8211; 1 Becher Joghurt Natur<br \/>\n&#8211; 1 Becher saure Sahne<br \/>\n&#8211; 1 Becher Schmand oder Cr\u00e8me Fraiche<br \/>\n&#8211; 1TL mittelscharfer Senf<br \/>\n&#8211; Salz, Pfeffer aus der M\u00fchle<\/div>\n<div><span style=\"color: #ffffff;\">_<\/span><\/div>\n<p><strong><strong><a href=\"https:\/\/culturefoodblog.de\/en\/downloads\/rezept_gruene_sauce_culturefood.pdf\/\" target=\"_blank\" rel=\"noopener\"><img class=\"lazyload\" decoding=\"async\" title=\"print\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27180%27%20height%3D%2730%27%20viewBox%3D%270%200%20180%2030%27%3E%3Crect%20width%3D%27180%27%20height%3D%2730%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/culturefoodblog.de\/wp-content\/uploads\/2011\/11\/print.jpg\" alt=\"\" width=\"180\" height=\"30\" \/><\/a><\/strong><\/strong><\/p>\n<p><strong>Schritt 1<\/strong>:\u00a0Die Kr\u00e4uter von den Stielen befreien und mit einem Messer oder Wiegemesser sehr fein schneiden. Eier hart kochen, abk\u00fchlen lassen und Schale entfernen.<\/p>\n<p><strong>Schritt 2<\/strong>: Schmand, saure Sahne, Joghurt und Dickmilch und Senf in einer gro\u00dfen Sch\u00fcssel mit dem Handmixer gut verquirlen<\/p>\n<p><strong>Schritt 3<\/strong>: Die Kr\u00e4uter unterheben. Die Eier mit einem Eierschneider (1 x l\u00e4ngs, 1 x quer) oder mit einem Messer grob zerkleinern und ebenfalls unterheben. Mit Salz und Pfeffer abschmecken.<\/p>\n<p><strong>Schritt 4<\/strong>: Die Sch\u00fcssel abdecken und die fertige Sauce mindestens vier Stunden (besser einen ganzen Tag) im K\u00fchlschrank ziehen lassen. Nur so nimmt die Sauce das ganze Aroma der Kr\u00e4uter an.<\/p>\n<p><strong>Schritt 5<\/strong>: reichlich Pellkartoffeln kochen und ungesch\u00e4lt servieren (am besten <a href=\"http:\/\/www.bioland.de\/kunden\/wissenswertes\/kartoffeln\/alte-kartoffelsorten.html\" target=\"_blank\" rel=\"noopener\">alte Sorten<\/a>)<\/p>\n<p><a href=\"https:\/\/culturefoodblog.de\/wp-content\/uploads\/2012\/04\/pellkartoffeln.jpg\"><img decoding=\"async\" class=\"lazyload alignnone size-full wp-image-1805\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27578%27%20height%3D%27394%27%20viewBox%3D%270%200%20578%20394%27%3E%3Crect%20width%3D%27578%27%20height%3D%27394%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/culturefoodblog.de\/wp-content\/uploads\/2012\/04\/pellkartoffeln.jpg\" alt=\"pellkartoffeln\" width=\"578\" height=\"394\" \/><\/a><\/p>\n<p><em>Tipp\/ Weinempfehlung<\/em>: Zur gr\u00fcnen So\u00dfe passt &#8230; gr\u00fcner Wein am besten. Kein Witz. Ein verspielt-leichter portugiesischer Vinho Verde ist der\u00a0ideale Einstieg. Weiter geht es mit einem Gr\u00fcnen\u00a0Silvaner aus Franken, der mit seiner\u00a0eher verhaltener Fruchtigkeit und\u00a0leicht\u00a0vegetabilen Noten \u00fcberzeugen kann. Der beste Begleiter ist jedoch ein Gr\u00fcner Veltliner.
