Weil\u00a0die Keule deutlich gr\u00f6\u00dfer ist, wird\u00a0sie 45 Minuten im Ofen vorgeschmort. Danach wird\u00a0das Zicklein hinzugef\u00fcgt, alles mit Wei\u00dfwein und Oliven\u00f6l \u00fcbergossen und gro\u00dfz\u00fcgig mit Knoblauch, Gem\u00fcsezwiebeln, Tomaten, Oliven, Orangenscheiben, geriebener Orangenschale, 1 Nelke, etwas Zimt, Fenchelsamen, grobem Pfeffer und frischen Kr\u00e4utern erg\u00e4nzt. Nach einer weiteren Stunde im Ofen (190\u00b0C.) ist\u00a0das Festessen perfekt. Der aromatische Sud, der sich in der Schale ansammelt, wird durch ein Sieb passiert und ergibt ohne weitere Zutaten eine fruchtig-aromatische Sauce.
