Zeitgleich lag auf meinem Schreibtisch ein etwas \u00e4lteres Kochbuch <em>&#8222;La Cuisine Alsacienne&#8220;<\/em> aus den 70er Jahren. Diese beiden Umst\u00e4nde, sowie ein Express-Rezept f\u00fcr einen einfachen Grundteig, den ich von meiner letzten Frankreich-Reise mitgebracht hatte, sorgten f\u00fcr eine Art Initialz\u00fcndung und dem Wunsch, mich mit dem Thema Tartes und Quiches etwas n\u00e4her zu besch\u00e4ftigen.<\/p>\n\n\n\n<p>Dass die Quiche ein herzhafter Kuchen ist, der urspr\u00fcnglich aus der Region Lothringen, nahe der deutsch-franz\u00f6sischen Grenze, kommt, ist weitestgehend bekannt. Dort bezeichnet man die Quiche auch als &#8222;Kueschle&#8220;,&nbsp; &#8222;Kuechel&#8220;, &#8222;Kichle&#8220; oder &#8222;Kichel&#8220;, was die sprachliche N\u00e4he zu &#8222;Kuchen \/ K\u00fcchlein&#8220; offensichtlich macht, \u00e4hnlich wie bei &#8222;Tarte&#8220; und &#8222;Torte&#8220;. Das Terroir-Rezept ist sehr alt und reicht bis ins 16. Jahrhundert zur\u00fcck. Unbegreiflicherweise fristet die Quiche in Deutschland eine Art Nischendasein. In B\u00e4ckereien findet man eher gro\u00dfe Gem\u00fcsekuchen (nicht selten als Blechkuchen mit Hefeteig, wie die Schweizer &#8222;W\u00e4he&#8220;), die mit der delikaten und luftigen Quiche nur wenig gemeinsam haben.&nbsp; Auch in Backb\u00fcchern werden die Quiches und Tartes eher am Rande erw\u00e4hnt, meist in der verstaubten Rubrik <em>&#8222;Deftiges zu Bier und Wein&#8220;<\/em> und dann als <em>&#8222;salzige K\u00e4setorte&#8220;<\/em> oder <em>&#8222;deftiger Zwiebel-Speckkuchen&#8220;<\/em>.<\/p>\n\n\n\n<p>Nachdem ich die Rote-Bete Tarte nachgekocht hatte, war ich von der modernen Interpretation derart begeistert, dass ich mich dazu entschloss, diesem Gericht bei Culture Food ein eigenes Kapitel zu widmen. Denn die Quiche kann man sowohl als Hauptspeise genie\u00dfen, als auch zwischendurch, als leckerer Happen im B\u00fcro oder als kleine Vorspeise.
