Das Fleisch\u00a0wird im hei\u00dfen Zustand\u00a0mit den H\u00e4nden oder mit einer Gabel zerpfl\u00fcckt\u00a0und nennt sich dann\u00a0\u201ePulled Pork\u201c.<\/p>\n<p>Am vergangenen Wochenende hatten wir gl\u00fcckliche Rahmenbedingungen:\u00a06 Freunde \u2013 einer davon mit einem neuen R\u00e4uchergrill\u00a0im Garten und der entsprechend gro\u00dfen Experimentierlust \u2013 eine Schulter vom schw\u00e4bisch-h\u00e4llischen Bio-Landschein, ausreichend Bier und Wein und sehr viel Zeit. Genau gesagt: 20 Stunden bei einer Rauchtemperatur von 100-110\u00b0C und einer Kerntemperatur von 91\u00b0C!
