Wenn ihnen der Sinn nach frischem K\u00e4segeb\u00e4ck steht, gehen sie einfach in eines der vielen &#8222;Ch\u00e4s-L\u00e4deli&#8220; (oder zu Spr\u00fcngli) und holen sich eine Portion Fl\u00fbtes, Salzkonfekt, Ap\u00e9ro-Snacks oder Kleingeb\u00e4ck mit K\u00e4se. Das wird dort t\u00e4glich hergestellt und ist vermutlich die internationale Messlatte, wenn es um Qualit\u00e4t, Geschmack und Frische geht. Bei uns in Deutschland gibt es nur noch wenige P\u00e2tissiers, die sich auf die Kunst des fein-aromatischen K\u00e4segeb\u00e4cks verstehen. Die Nachfrage ist sehr gering, der Preisdruck gro\u00df und somit bleibt den meisten von uns nur eine bescheidene Auswahl von Industrieprodukten im Supermarkt. Ggfs. kann man f\u00fcr diesen Arbeitsschritt ein Nudelholz verwenden, es geht aber auch mit der Hand, da die Masse gut formbar ist und kaum klebt. Das Papier mit den Teigplatten im K\u00fchlschrank ca. 30 Minuten k\u00fchl stellen, bis die K\u00e4se-Butter-Mehl Mischung wieder fest geworden ist. Umluft vorheizen. Einen Papierbogen mit der gek\u00fchlten Teigplatte auf eine Arbeitsfl\u00e4che legen und mit einer Metallform ausstechen: Romben, Vierecke, Kreise, Dreiecke, Fische&#8230; der Fantasie sind keine Grenzen gesetzt.
