F\u00fcr dieses Rezept verwende ich nur Frischware vom gut sortierten Fischh\u00e4ndler, dem ich auch die Reinigung \u00fcberlasse. <!--more-->Sollte es nicht anders gehen, kann man die Fische nat\u00fcrlich auch selber ausnehmen. Das geht so: Kopf abdrehen, mit einem kleinen Messer (ge\u00fcbte K\u00f6che machen das mit dem Daumennagel) die R\u00fcckengr\u00e4te bis zum Schwanz entlang fahren, Sardelle aufklappen und Gr\u00e4te mit allen Innereien abziehen. \u00a0Die Filets aussp\u00fclen und \u00a0in eine Sch\u00fcssel legen. Mit einem Schauml\u00f6ffel herausnehmen, auf einer dicken Lage K\u00fcchenpapier abtropfen lassen und nach eigenem Geschmack salzen. In Spanien werden die Boquerones oft mit Zitrone gereicht, die Alici genie\u00dft man in Italien dagegen meist pur.
