Eine ehrlich gekochte Minestrone als Seelentr\u00f6ster an einem k\u00fchlen Herbsttag, das perfekte Krabbenbr\u00f6tchen an einem windigen Sommertag an der Nordseek\u00fcste, ein zartschmelzender Camembert mit frischem Krustenbrot, dazu ein Glas Morgon oder C\u00f4tes de Ventoux, vielleicht begleitet von einem guten Buch auf dem Sofa oder vor dem Kamin. Eine herzhafte Currywurst in der n\u00e4chtlichen Stadt mit frisch gezapftem Bier oder ein Salat aus gepfl\u00fcckten Wildkr\u00e4utern, Ziegenfrischk\u00e4se und bestem Oliven\u00f6l an einem Fr\u00fchlingstag \u2013 es sind diese scheinbar einfachen Dinge, die wahren Genuss schenken.<\/p>\n<p>Doch Genuss, Zeit und ausgewogene Ern\u00e4hrung sind keine Selbstverst\u00e4ndlichkeit. Der Alltag h\u00e4lt f\u00fcr viele von uns gen\u00fcgend Stress und Herausforderungen bereit, sei es zu Hause oder im Beruf. Da greift man schnell zur T\u00fctensuppe, zur Tiefk\u00fchlpizza oder zur Fertigso\u00dfe aus dem Tetrapack und ignoriert das Kleingedruckte auf der Zutatenliste. Stichwort &#8222;Glukose-Fruktose-Sirup, enzymatisch modifizierte St\u00e4rke, Erbsenprotein-Exturat, Methylcellulose, Mono- und Diglyceride von Speisefetts\u00e4uren, Gummi arabicum, Aroma&#8220;. \u00a0Irgendwo war einmal zu lesen:<\/p>\n<blockquote>\n<p><em>\u201eZeige die Zutatenliste oder Inhaltsstoffe eines Produkts der eigenen Gro\u00dfmutter. Wenn sie nicht versteht, was darin enthalten ist, solltest Du es besser nicht essen.\u201c<\/em><\/p>\n<\/blockquote>\n<p>Ein Gedanke, der es treffend auf den Punkt bringt.<\/p>\n<p>Dabei muss niemand zur Ern\u00e4hrungsexpertin oder zum Ern\u00e4hrungsexperten werden, um gut zu essen. Die L\u00f6sung ist ebenso schlicht wie \u00fcberzeugend: selbst zu kochen, auf frische Zutaten zu setzen und saisonal sowie regional einzukaufen \u2013 das sind die bew\u00e4hrten Grunds\u00e4tze. Selbst Fast-Food-Liebhaber und pragmatische Snacker, f\u00fcr die Essen vor allem schnelle und funktionale Nahrungsaufnahme bedeutet, bekommen leuchtende Augen, wenn die K\u00fcche nach warmem Apfelkuchen oder frisch gebackenen Schokoladenbrownies duftet. Ebenso schwer f\u00e4llt es, zu widerstehen, wenn im Juli frischer Fisch oder ein saftiges Steak auf dem Grill brutzelt oder an einem verregneten, kalten Februartag ein herzhafter Eintopf auf dem Tisch steht. Unz\u00e4hlige Male hat sich an meinem K\u00fcchentisch gezeigt: Das mit den \u201eleuchtenden Augen\u201c funktioniert tats\u00e4chlich \u2013 jedes Mal. Ganz intuitiv sp\u00fcren wir, wie gut es uns tut, auf den Rhythmus der Natur und die Jahreszeiten zu h\u00f6ren.<\/p>\n<p class=\"my-0\">Und genau darum geht es in diesem Blog: um Geschmack, Wissen, Esskultur, um authentischen Genuss und um Rezepte, die \u2013 mit wenigen Ausnahmen \u2013 unkompliziert nachzukochen sind und Freude bereiten. Es muss schlie\u00dflich nicht an jedem Tag ein aufw\u00e4ndiges Men\u00fc sein. fusion-text-3\"><p style=\"text-align: left;\">Dieser Blog richtet sich weder an Food-Snobs noch an Anh\u00e4nger ganz bestimmter Ern\u00e4hrungsweisen oder Weltanschauungen (Veganismus, Vegetarismus, Makrobiotik, Bio, Protein, etc.), sondern an Menschen, die Spa\u00df am Kochen haben, Anregung suchen und echte Qualit\u00e4t einfordern. Superbillig einkaufen und trotzdem tolle Qualit\u00e4t erhalten, das funktioniert nicht. Wenn man anst\u00e4ndig essen will, muss man schlicht einen angemessenen Preis daf\u00fcr bezahlen. Wer beim Discounter das g\u00fcnstigste Oliven\u00f6l oder ein ganzes \u201eGutshof-H\u00e4hnchen\u201c zum Knallerpreis kauft, der will nicht wirklich wissen wo das Produkt herkommt oder unter welchen Bedingungen es hergestellt wurde. Also nur trendige Bio-Produkte, das teuerste Oliven\u00f6l, Filetsteak, Tr\u00fcffel, Kaviar und G\u00e4nseleber? Keinesfalls! Selbstgemachtes und hochwertige Produkte von regionalen Produzenten, bewusst eingekauft und klug kombiniert, m\u00fcssen nicht teuer sein. Billiger als Industriemampf oder Fertigprodukte sind sie allemal. Je komplizierter die Zubereitung und je exotischer die Zutaten, desto besser\u2026 Das hat sich inzwischen ge\u00e4ndert, und zwar aus einem einfachen Grund: Es ist mir zu kompliziert geworden.<\/p>\n<p>Wenn ich eine G\u00e4nseleberpraline umh\u00fcllt mit Guanaja Bitterschokolade, Mascarponeravioli an wei\u00dfer Strauchtomatensauce oder Millefeuille von der Felsenrotbarbe oder Cappuccino vom Sauerbraten mit Stockfischgeleek\u00fcgelchen in zweierlei Texturen genie\u00dfen m\u00f6chte, dann lasse ich ich mich in einem entsprechenden Restaurant verw\u00f6hnen und stelle mich nicht mehr stundenlang in die K\u00fcche. Auch die vielen Kochb\u00fccher, die sich im Laufe der Jahre bei mir angesammelt haben, verstauben zunehmend im Regal. Vorbereitungszeit 5 Stunden? Plus Einkauf? Plus Gar- und Kochzeit? Vakuumgaren? Molekulare Zutaten? Nicht mit mir. Ich halte mich (weitestgehend) an das KISS Prinzip: \u201eKeep it simple, stupid\u201c und entsprechend sind auch meine Rezeptideen: Aromatisch aber dennoch relativ einfach. Ganz ehrlich \u2013 es muss nicht immer ausgefallen sein. Und es muss nicht alles mit einem Doppelsalto angerichtet oder mit f\u00fcnf verschiedenen Saucen dekoriert werden. Ein gutes St\u00fcck Fisch, sorgf\u00e4ltig zubereitet, ein St\u00fcck Fleisch mit aromatischem Gem\u00fcse, eine Bauernente wunderbar zart und saftig aus dem R\u00f6mertopf oder Slow Cooker, das ist doch etwas herrliches! Und ja \u2013 von Zeit zu Zeit gibt es auch aufw\u00e4ndigere Rezepte. Da will ich es einfach wissen. Manche Festtagsbraten lassen sich nun mal nicht in 30 Minuten kochen.<\/p>\n<p>F\u00fcr meine Rezepte verwende ich durchweg frische Zutaten vom Wochenmarkt, von ausgesuchten H\u00e4ndlern oder aus dem eigenen Garten. Mastfleisch aus dem Supermarkt, Tiefk\u00fchlpizza oder T\u00fctensuppen kommen mir nicht ins Haus. Das bedeutet nicht, dass ich oder meine Frau jeden Tag einkaufen gehen und den gr\u00f6\u00dften Teil unserer Zeit in der K\u00fcche stehen. Weit gefehlt! Meine Frau und ich haben Vollzeitjobs, die uns oft bis nach 18 Uhr im B\u00fcro festhalten, wir haben Kinder, Familie, Freunde, Hobbies und machen Sport. K\u00fcche k\u00f6nnte man als gem\u00fctliche Landhausk\u00fcche beschreiben, mit 3 x 4 Meter Fl\u00e4che, Einbauschr\u00e4nken aus den 90er Jahren und einem 20-Jahre alten Herd mit altersschwachem Backofen. Mittlerer Durchschnitt also. Aber es gibt viel Platz, einen gro\u00dfen K\u00fchlschrank, ordentliche T\u00f6pfe, schwere Eisenpfannen, Br\u00e4ter, Kupfersauteusen und scharfe Messer. Mehr braucht es nicht. Ich wohne auf dem Land (im tiefen Odenwald, 20 km von Heidelberg entfernt) und komme dadurch in den Genuss eines eigenen Gartens. Allerdings baue ich weder Kartoffeln noch Gem\u00fcse selbst an, daf\u00fcr fehlt mir einfach die Zeit bei der Pflege und beim Kampf gegen die Schnecken. Die angrenzenden Streuobstwiesen versorgen mich das ganze Jahr \u00fcber mit Kirschen, Pflaumen, \u00c4pfeln, Quitten und Birnen, aber auch N\u00fcsse und Kastanien. Au\u00dferdem wachsen hier Goji-Beeren, Walderdbeeren, Johannisbeeren und Brombeeren. Ganz besonders viel Spa\u00df bereitet mir ein selbstgebasteltes, schneckensicheres Kr\u00e4uterbeet, in dem frischer Schnittlauch, Thymian, Rosmarin, Fenchel, Salbei, Oregano, Bachkresse, Knoblauch und Minze wachsen.<\/p>\n<\/div><div class=\"fusion-text fusion-text-12\"><h3>FOOD-FOTOGRAFIE<\/h3>\n<\/div><div class=\"fusion-text fusion-text-13\"><p>Alle Rezepte sind ausf\u00fchrlich bebildert, denn eine anschauliche Schritt-f\u00fcr-Schritt-Anleitung in Bildern erweist sich oft als hilfreicher als lange Texte. S\u00e4mtliche Food-Fotos entstehen in Echtzeit \u2013 direkt in der K\u00fcche oder im Garten. Wo immer es m\u00f6glich ist, wird auf Blitzlicht oder Lichtwannen verzichtet, um die Gerichte so authentisch und nat\u00fcrlich wie m\u00f6glich zu pr\u00e4sentieren. Mein Arbeitsger\u00e4t ist eine Nikon D7500 mit einem AFS Sigma 17-70 mm sowie weitere Objektive zwischen 12 bis 800 mm. Mittlerweile kommen ein iPhone 11 und 14 Pro immer h\u00e4ufiger zum Einsatz (die Dinger werden einfach immer besser\u2026). Die Bilder werden von mir mit Photoshop digital nachbearbeitet. Auf spezielle Filter, Makros oder Plugins verzichte ich dabei vollst\u00e4ndig.
